Extra Meal Ready

A friend of mine told me a great idea the other day
that she had read in a magazine. She had read to
always keep a main dish frozen and ready to deliver
in case of a death, birth, illness, etc.
I usually have some meals fixed and in the freezer
for us to eat but now I have added 1 dish that is
"to go" ready should the need arise. If I don't have to
use it in the next few months then we'll eat it and I'll
make another one to keep in the "just incase someone is
in need" dish. I always right the ingredients and directions
on the foil lid so whomever receives it knows exactly what is.
Don't know why had never thought of doing this before. Thank
goodness for helpful hints in magazines.

I love Easter! I love all holidays but the promise that comes with
Easter is the greatest gift of all. This in one of our family traditions!
We have made resurrection rolls twice in the past few days.
Such a great way for the kids to help and to hear and continue
to learn the real meaning of Easter. Hope you'll try them!

Cooking Ahead

Here are the things I cooked up to keep on hand. This saves so much time
and money. Hope you find something you would like to try!

Make Ahead Breakfast
1 lb sausage (cook & drain)
2 slices of bread
1 c shredded cheddar cheese
6 eggs
2 c milk
1/2 tsp salt
1/2 tsp dry mustard

Break bread into 1/2 inch pieces and spread in a dish that has been buttered. (9x13)
Top with the sausage and cheese. Beat eggs and combine with milk & seasoning. Pour over cheese. Cover and refrigerate (or freeze) overnight. Bake for 30-40 min. @ 350 when you are ready to eat it.
*I usually take this to new mothers or church when it's our turn to bring snacks since it's easy and is supposed to be made ahead.

E-Z Chicken Casserole
1 lb chicken ( about 4 breasts) cooked and cut up
1 can Cream of chicken soup
8 oz sour cream
Poppy Seeds
1 stick melted butter
1 sleeve or Ritz crackers

Place chicken in a baking dish. Add soup and sour cream. Stir. Add poppy seeds-I just sprinkle some in--maybe about 1 tsp. Crush up the sleeve of crackers and mix with melted butter. Pour over top and bake @350 for 30 min.
*To freeze, skip the crackers & butter until you are going to bake it. This is super yummy and easy to make ahead.

Veg-All Casserole
2 cans Veg All (or any mixed veggies)
1 c shredded cheddar cheese
1 c mayonaise
1 c crushed Ritz crackers
1 can water chestnuts, sliced
1 small onion minced
1/2 stick butter

Mix everything except crackers and place in baking dish. Place cracker crumbs on top and drizzle with butter. Bake for 30 min @ 350.
*If you are freezing, save the crackers & butter off and add when you cook.

These are just a few of the things I made. Sorry there are not pictures. I assure you they are
delicious.

Coupon-a-holic

My name is Jamie and I am a coupon-a-holic.
I had to take my 2 year old to the doctor today.
When I walked in I spotted the Parents magazine.
Since I get that magazine, I knew that there was
a $1/1 Ronzoni pasta coupon. I took the magazine
to the room with us and ripped out the coupon.
(Does this make me a thief? They will just throw it
out or some other coupon-a-holic would get it.)
Then when I went to put the magazine in the rack
while in the room, there was another Parents magazine.
Yep--I took that coupon too. Then I decided to thumb
through the Rachel Ray magazine and low and behold--
another coupon. I am now is possession of 4 $1/1
coupons for the pasta that is part of Kroger's March
madness sale. I will make $$$ buying the pasta and get
4 FREE boxes of Ronzoni pasta. Love it!

Walking Tacos

We are heading out to a life group fellowship in
a little while. If you have a group you need to feed,
this is one of my favorite "recipes." Enjoy!

Walking Tacos

taco meat ( fix according to how many you are feeding)
individual bags of cheese Doritos
lettuce
tomato
onion
drained Ranch style Beans
cheese
sour cream
guacamole

Get a bag of Cheese Doritos and crush the chips. Then open the bag and put in the ingredients
of your choice. Grab a fork and dig in. Best part is---no dirty dishes. I usually fix the meat and have everyone else bring something to go on or with the walking tacos. Not too expensive and again, easy clean up!

Grocery Shopping

I used to just go to the grocery store and shop. I might would use a coupon here and there but nothing like I do now. It took a bit more time in the beginning but the savings was well worth my time. Now I have it down and can get in and out a bit faster. My kids even help me and Hayden loves to get me some coupons from those little machines in the store. Teaching him young!!

Cook Ahead??

Do you cook meals and freeze them ahead of time, do you make a weekly or monthly menu, or do you just wing it? I am guilty of all 3 and I have to admit that I spend way more money when I wing it. I have started making a monthly menu. I stick to it for the most part but may draw arrows and move meals around to fit our schedule (or my taste buds). I TRY to cook a few things up ahead of time but have been lazy the past few months in doing so. Sometimes I try to brown some meat or boil some chicken so it's easy to thaw and use for casseroles or soups. I am going to stay in tonight and empty out the pantry with what I have so MAYBE I can save even more on my March groceries. Do you have a great recipe for cooking ahead and freezing?Would love for you to share it if you do. I'll let you know how my Friday evening of cooking ahead goes.

Kroger has a few deals until tomorrow. I meant
to post these earlier. This is the transaction I did
earlier today. Again, was going to post a pic but
the battery on my camera is dead!
The main reason I did this was to get the Purex laundry
detergent. It is part of the buy 10 participating items
get $3 off at the register. Remember you have to buy
10 qualifying items.

When you purchase the item that you loaded an e-coupon for, when you scan your shoppers card, the e-coupon amount will be deducted at the end of your transaction. Coupon Storing System

If you are just getting started in couponing, you
will need a system to keep your coupons organized
and handy. I have a big notebook with 4x6 photo
protectors (from Wal Mart) that I labeled. Each week
I clip out the coupons and file them away. This is what
works best for me. I did have a box at one time but
my children dumped it--huge disaster. The notebook is
easy for me because I can grab it and my little ones.

If you wish to use a box-shoe box style-it is just as
good. I labeled index cards and put them in an
envelope that I had cut the flap off of. I do suggest
a box with some sort of lid.
